News Brief: Sbarro—with a Twist—Opens at Fashion Island

The fast-food restaurant's new concept allows patrons to see the food being prepared.

If you like to watch your food prepared from beginning to end, stop by the new Sbarro at Fashion Island and indulge in its new concept of food preparations.

Sbarro opened Tuesday at Fashion Island's Atrium Cafes and is the first West Coast location—and the third in the country—showcasing its new concept, which includes a new look, a new menu and a new way of preparing food dishes.

"Sbarro puts its cooking front and center, for everyone to see," said Jane Gillespie, spokeswoman for Fashion Island. "Dishes are now prepared where guests can watch the entire process and see the high quality of the fresh ingredients being used."

The new concept also includes a create-your-own pasta station, where a sauté chef prepares fresh pasta to order. Patrons can combine any pasta, any sauce and any of the fresh toppings to make their favorite combinations. Sbarro also offers dough made from scratch every morning, pizza baked in brick ovens, imported pastas and olive oils from Italy and locally sourced produce.
