Winter in the Valley of Kashmir Dinner with Chef Geeta Bansal!

Kashmir, the northernmost state of India nestled between the Himalayan ranges with verdant green valleys and streams of fresh water, has a culinary tradition that dates back far in time. It has been the entry point for invaders such as Timur and the Persians and many more who have left their imprint on the cuisine of the region. Winter is an exceptional time when the snow covers the ranges and valleys and heartier fare appears on tables.

Goat, lamb, trout, duck and winter vegetables like turnips, potatoes and preserved fruits such as apricot show up in curries seasoned with saffron and colored with cockscomb and Kashmiri chilies. Yogurt is the base of marinades and many curries like the 'Dum Aloo' . Mustard seed oil, walnuts, almonds, saffron are regional products used widely in the traditional recipes. 

Chef Geeta and the Clay Oven will offer a taste of the festive banquets named Wazwan in a 5-course dinner on Wednesday, November 20th with optional wine pairings to take you on a winter journey in the vale of Kashmir. 

Dinner begins at 6:30pm with limited seating at $65.00pp with optional wine pairing by our in-house sommelier at $25.00pp.
